Key targets for probiotics production include culturing the microorganisms to high cell concentration while minimizing cells viability loss during stabilization and freeze-drying for instance.

This study highlights the importance of the probiotic strain’s growth conditions and of the addition of a selected nitrogen source in the growth medium which had strong implications for enhanced cell’s acid tolerance.
