Bifidobacterium is a genus of probiotic bacteria that offers numerous health benefits, including improved digestive function, enhanced immunity, and reduced inflammation (O’Callaghan and van Sideren, 2016).
Developing innovative and effective functional foods that meet the ever-changing needs and preferences of consumers is an expensive process (Betoret et al, 2011). On the industrial scale, the production of probiotics often relies on dairy-based culture media, limiting their suitability for dairy-intolerant individuals and animal-free markets.
In this study, we evaluated the potential of yeast peptones as a source of amino acids and peptides for industrial-scale production of Bifidobacteria strains in dairy-free and animal-free culture media. Our method aims to provide a cost-efficient solution of producing active probiotics for a broad range of applications.
